Not to boast but this is the best pistachio ice cream I've ever tasted. Although, as it's not made with eggs, I'm not sure if it can be classified as 'ice cream'. Either way the encouragement I have for you to make this should also come with a caution, as it's very addictive. I've forbidden myself to make it again as I have no self control to stop eating it. I'll have to wait until next summer to have again as a treat.
Recipe
100g shelled pistachios
1 can of condensed milk
100 millilitres pistachio, liquor (optional) or milk
2-3 drops Almond extract
Blend and freeze overnight
