For me this is the perfect sweetness in a biscuit. I’ve halved the amount of sugar most cookie recipes suggest and it was perfect for me, of course if you want it sweeter just add more.
125g unsalted butter, softened
75g light brown soft sugar
75g golden caster sugar
A pinch of sea salt flakes
1 egg
100g Walnuts (crushed)
1 tsp vanilla extract
300g plain flour
1 tsp (heaped) baking powder
100g dark chocolate, chopped into chunks or use chocolate chips
For cooking I would roll the dough into a sausage shape and cut small rounds as I found these do not spread and therefore had to flatten with a spoon. Hence why these are not looking pretty. They tasted very nice though. Cook at 180c for 8-12 minutes depending on how small or big the rounds are.
